Grains from the region Vegetables, salads and legumes from the hotel garden. As the Vinschgau region gives us so many gifts, it's easy for us to conjure up a variety of vegetarian dishes. Each day we offer a meat-free whole-food menu - accompanied by a rich, raw vegetable and salad buffet, for which our vegetarian hotel in Italy is known beyond the borders. We can also prepare animal protein-free dishes on request.

Here at the Hotel Greif, meat-free cuisine does not necessarily mean doing without, but rather is an expansion of the culinary horizon.

Wholesome sources of energy

Leave the food as natural as possible - following that principle from Professor Dr. Werner Kollath, we strive to create vegetarian wholefood dishes for gourmets every day. The majority of the products come from organic farms and holdings in South Tyrol. Some of the vegetables, legumes, salads and herbs we use even come from our own garden. Our home-baked wholemeal bread and homemade pasta made from local grains are well known. Whether freshly ground spelt, rye, wheat or buckwheat - our chefs use it all.
